Baking Disasters Part II

I’m a sucker for desert recipes using weird ingredients in order to lower the calories. I’m currently working on a shortcrust pastry alternative for a lemon tart. The Londoner recently wrote about a 100 cal brownie recipe, and it would have been rude not to try it. The weird ingredient in this one? Yoghurt. WHAAAAT? I know right. Personally, I find it very hard to believe that she eats anything, as she is possibly the thinnest person that ever lived. Just look at her recent holiday pictures and try not to give up on life too much.

Anyway. I thought I’d give these a go. My maths made the out to be more like 80 per slice and I cut mine into less pieces. They’re pretty easy to make if you have a blender or processor.

Easy, but messy. I used Almond milk instead of skimmed like she said, but other than that I pretty much stuck to the recipe. EXCEPT she uses stevia, and I used normal evil cancer sweetener, so mine came out really dark and rich, a bit too rich for my liking. Before cooking it looked like chocolate milk and I was very doubtful that it would resemble anything like a brownie.

YE OF LITTLE FAITH, kind of. She said 20 minutes or less, I left mine in for 40. But eventually it did firm up. I left it to cool for like 40 minutes as well as it was still gooey in the middle. I served mine with cold custard but they would have been better with ice cream. Maybe next time less cocoa powder or more sugar. I think an overall success though. The texture was nice and brownie-like.
